FWIW, I've seen commercial racing games run critical parts of their sim at 1000Hz steps and other parts at 100Hz steps.

1/48th is usually the highest anyone would go

If your visual framerate is 60Hz and you don't want to have any input lag, then you'd also have to simulate at 60Hz.
