Should I be explaining my absence in all active projects?
Should I notify them, or continue like this and push out very small new updates at some intervals (3 days or so)?
I don't plan on dropping it, nor wished to stop developing it. Real life is really taking its toll on my well-being.
Are these solo projects, or projects where you're working with other people? If you're working with other people, is there some expectation of a certain productivity level?
If you're working with team-mates you should probably consider updating them, even if it's just a brief message to say you're having some issues and will be less active.
If you're trying to maintain a community or following a similar brief explanation may be appreciated and let people know that you're just taking a break rather than abandoning the project.
Other than that, if you're just working by yourself there's probably no need to update anyone.
If you're having health/well-being problems, you should definitely take the time to deal with them, and if necessary that might mean leaving a project altogether at least for the meantime -- don't push yourself to continue making small regular updates if it will be damaging to your health, unless those updates are necessary to maintain a product from which you earn your main income.

I'd upvote it also if I could.
Is this thread a good fit for the Production and Management subforum?
