Regarding your three fonts, I think "Lithos" looks the best here. Though I don't like the font... but I know what look you are aiming for.

But anyway. I had a few minutes and made some doodles. (Which are obviously in a komplete different style, but I didn't want to put them into my trash can either.)

Regarding the endings, you could try something like slowing down the last few notes in some sort of ritardando.

You could try positioning the health bar above the sprites, dont use different colours but only one red bar.
This red bar could have different lenghts for each different type of unit so the player can initially see the health difference of the units and better decide which one to take out first etc. The bar then shortens with each hit. So there is nothing of the health bar left in the end and the in defeated.

Just an idea though. :)
