efficiently processing large text?

What do you mean by processing? This is an honest question

Sort the words? Parse the file, like a browser would parse a html file? Efficient reading or lines? Search for text in text?

That all depends upon which language you want to use, and what you mean by quickly.

If by quickly you mean quickly write code that parses text, then the best way to go is using regular expressions (a search on google should turn up plenty of results, and O''Reilly publishes a great book on them called "Mastering Regular Expressions"), and a language that is setup for handling text.
Perl would be my fist preference for handling text, but there are plenty of alternatives. There are even some regular expression libraries for C and C++ for free download.
