How do I make a boss?

Hellooo, I''m going to add bosses to my shoot''em up. Now I was wondering, I want big sprites with different states and parts, but I don''t know how to tackle this. For example: imagine a cliché boss that''s a giant head with two hands. Most of the time these hands protect the head, because only when shooting the head will the boss take damage. So you have to hit the head not the hands. I already have a basic state-based scripting language for normal enemies that covers animation and movement. Now how do I compose such a big burly boss foe? The problem is that they have to be composed of different parts, but still act as a whole (like destroy it and everything goes down, not only the part you shot). Any ideas? Tnx!

Make it 3 parts. (Head, hand-left,hand-right).
Either make the hands invulnerable or give them insanely high amount of HP.
Then use the scripting to make it so that when the head dies, it kills the hands.
