glLoadIdentity();

It loads the current matrix with an identity matrix. An identity matrix looks like this:

1000
0100
0010
0001


And you select the current matrix by, glMatrixMode().
So if you code:

glMatrixMode(GL_MODELVIEW);
glLoadIdentity();

will make the GL_MODELVIEW matrix look like the 01's above.
