There are entire communities and companies doing that kind of thing.

Look somewhere in the intersection between robotics and data acquisition and process control. One of many, many, companies to start looking at for interfaces is www.omega.com. (The worldwide leader is probably National Instruments, but they''re kinda expensive)

cool thank you, but I''m not looking to rely on a commercial interface hehe. I want to design and code it myself but just need some tutorials to get started

"Linux Programming, second edition" by Kurt Wall, published by SAMS, includes a part about programming drivers in linux. In there he includes mention of how to control a step moder.

Check out insb, outs, insl and outl, for controling through direct computer attachment.

Assuming you dont want to hook up an entire computer to the remote device, I think most solutions are going to have fairly specific interfaces... this could get very detailed and messy. Especially with the wireless requirement, it's going to be hard to find exactly what you want that dosn't require a proprietary interface, IMHO.
