texture mapping process

I think I know the basic concept behind texture mapping:each vertex has one or more tex coord associated with it,and the hardware(TMU) will fetch data from the texture using the pixel''s tex coord.There''s one thing I don''t really understand:how is the vertex''s tex coord assigned? If I only wanna draw a very simple object,say which is composed of dozens of vertices,it''s possible to manually assign tex coord to every vertex,then what about those very complex objects?

in short, there are tools that do the texture (uv) mapping on the model. So UV coordinates are loaded just like position coords (xyz) or normal vectors (ijk).
