Flight Sim Damage modelling...

After playing a flight sim like IL-2, I was wondering how the damage modelling could be reproduced. Specifically, Im looking at how they would track collision and have debris break off independently of the main model. I think IL2 etc almost certainly has pre-defined break points in the models, possibly with some stress analysis to decide where to break, along with some random particle spawnage for the small bits.
The IL2 planes I've noticed do seem to have a tendency to just 'fall apart' if hit too much though - possibly just random breaking up.
