PIC as in Programmable Interrupt Controller, or PIC as a small embedded micro-processor?

For the interrupt controller part, you can't really do much more than what it's already doing. Re-programming it is likely to just hang your machine.

For the embedded CPU part, you need to hook it up to some I and some O. Switches (with de-bounce) and LEDs come to mind, because they are easiest, but micro-relays and various ADC/DACs can let you do all kinds of process control.

If you mean the PIC micro, then you can do anything with it that you can do with an embedded microcontroller. Build a thermostat, a 'guess the number' or 'memory' type game with LEDs and buttons, use a few FETs to drive a stepper or servo motor... :)
