Assuming you are referring to orchestration (and composing for orchestra), there are many different books on orchestration out there, and they can be very confusing if not put in the proper context (in other words… actually hearing examples). I don’t really have any recommendations as I can’t say they taught me that much. I feel I've learned more just by studying the scores of orchestral composers such as Mahler, Ravel, Stravinsky, etc. I also hear you can order scores by film composers such as John Williams, but the library around here doesn’t carry them, so I don’t know how useful they would be.

The Dover miniature scores are really inexpensive, you should considering getting a few of them for orchestral works you like: http://store.doverpublications.com/by-subject-music-miniature-scores.html

If you are looking for a guide to listening and appreciating orchestral music, then again, there are many books out there for that. It really depends on the type of orchestral music you are interested in.

there are a few good orchestration books that i use for reference and such; i'd recommend the one by rimsky-korsakov and the one by adler (their names are escaping me at the moment).
