I have taken an interest into the syntax of various assembly languages for different processes. I already know a lot of the x86 syntax but I was looking more towards some others. What processor type does the Gameboy use and where can I find some information on its syntax layout, some beginner's tutorials and if possible, a good working assembler? Likewise for the Nintendo 64. Thanks.

The gameboy uses a Z80, the N64 uses a MIPS processor.

[google] for either of these and you'll find a ton of info.
