The short answer is: Triangles.

Now for the long answer: Most graphics cards only draw triangles, so obviously there can be some speed benefits. But there is also a problem with quads, think about this; a quad is basically two triangles, stuck together at one edge, but if you visualize those two triangles, there is no reason why they should end up at the same angle. So if you use quads, you are losing elevation detail, because there won't be that crease down the middle.
