Gambling & payout algorithms.....

I want to create some method of calculating payout in a gambling type game.....I've had some ideas based on such things as "total money" vs "total money out" and using this ratio as one factor.....but wondered if anyone has any sources or is willing to share some info on working out whether to "payout" etc.. Any help would be appreciated...

What kind of gambling game is it?

it's a pool game...so I want to be able to decide how much I can payout based on the players skill in the game, using also the amount the game has taken.......etc.. does that make sense?
Is there any AI involved, do you play computer opponents?

no, you play against time...sink as many balls as poss type scenario
Ok well then i would give bonuses to the play for say:

Assuming various game types:

Number of balls in 1 minute, extra bonuses for all the table and more.
Number of racks of balls cleared in succession
Or they could get a point for every second remaining on the clock once the balls have been cleared.
Number of cushions involved in a pot could give bonuses.

just some ideas.
