Changing only the Z component in VBOs/PBOs

Is there any way, using glMapPixels, glBufferSubData, or a pbo and glCopyPixels to update only the Z component from the X,Y,Z vertex data in a VBO? Every frame I update a 512x512 grid where the X,Y components are just the homogeneous coordinates, and therefore don't change, and the Z component is read back from the depth buffer from something I render. It doesn't make sense to send the same X,Y values if they never change, but I don't see a way to send just the Z value.
