Hardware acceleration & offscreen images

With older graphics cards, you had to render to the screen for GL to use the graphics hardware when rendering. Is that still the case with most chips?

No, I want to render images that will just be used for internal calculations... never to be displayed on the screen, even as textures. I know in the past, if you did this, the rendering was done in software, which is not an option here.

If you render your stuff to the framebuffer, you must clear it right after to prevent unwanted things from showing up when swapping and the back and front buffers.
You can use pixel buffer to render directly into into a surface that will never get displayed in your framebuffer unless you bind it to a texture.
Another solution would be to use the recent FBO extension; you attach your texture to it, bind it, do some rendering, turn it off and voila; your result is now stored into your texture target.
PS: All hardware accelerated of course :)
