Particles that destroy a texture

I'm working on this effect that takes a word (like Water) and then you bring particles in to form the texture and then you destroy the texture with particles that eventually fade out. I have the means of doing this except I'm not exactally sure how you would know where to set the particles. Do you do a pixel color check and just fill the pixels in with particles somehow? In case you don't understand I have a pretty good example of it on this webpage( Just download "The Foundry" demo and source (written in Delphi but I'm doing mine in C++). The intro of this demo shows exactally the effect I'm trying to achieve.
