image processing is closely related to signal processing, it doens't requre an degree in electrical engineering because it's maily software implimentation. most people that have background in image processing have backgrounds in computer graphics as it's a highly parallel field. an image is a two dimensional signal, we can do various things with is using signal processing such as filtering(edge deteciton, etc) and more image proicessing stuff such as object recgonition, stuff for robotic vision. it's real interesting field. digital signal processing is what is used in image processing(mainly) as analog signals are cumbersom to work with, you need a new elecctronic device for every type of filter you design. so ee is not a harsh prereq, though many specialists in that field are, but you got just as many computer scientists.
