I'm looking to make a few character sprites in 3ds max and I wanted to know if anyone knows how to render sprites out to fit the size you need each time. Anyone know how to do this? Seems like an incredibly hard task to get the camera angles right and on point for each direction.

Nop it is not so hard
You need to set isometric view :D I think that when you press U key you got that.
Render target dimensions you set inside render dialog. Dont render antialiased.
Set background color to the color you use in your engine.
For charachters you can use Curious Labs Poser software. You can export them to 3DS or you can buy Poser plugin for 3DMAX.
