I''ve only ever seen one book that promised to take you through an entire engine. It was for Direct X 7 though... so it could be abit useless now. I think it was called "Programming a 3D game engine in Direct X", not certain.

I recently purchased 3d game engine design by david eberly (i think thats the author). Its a create book and it covers all aspects of designing a game engine. The author is one of the designers of NetImmerse. Great book. I would brush up on math first though.
