you probably should investigate more advanced 3d features such as multitexturing, fbo, vertex buffers, shaders etc if you're not familiar with them already.
also techniques like shadow volumes/textures and space partitioning (bsp/quadtree/octree) are nice to know.
wihtout knowing your current experience level, i'd say it'd be good to gain knowledge of more "general" things such as physics, collisions, basic ai and sound systems.
most important: coding as a hobby should feel fun!

Uber-pong, of course. Choose something that needs improving, learn about it, and do it. Use your pong program as a platform to practice new skills. You'll run out of skills to apply to Pong, so eventually you'll need to move on to a more complex game. Remember, programs are never finished, only abandoned.
