Texture Splatting on a Mesh not a heightmap?

Hi Does anyone know of a program that will perform texture splatting on a mesh? Most landscape terrain generators that I've used all make use of heightmaps. The problem with heightmaps is that you can't make caves or complex landscapes such as a sphere (for a small moon). What I need is something that will let me paint textures on a very large 3d mesh a sphere. There must be someone out there who has tried this.

I could be mistaken but couldn't you just do a typical UV map on the mesh? Make the cave or complicated terrain in a modeling program, split it into manageable sections and then unwrap the model sections into a UV map that you can then assign textures to?
