how do mesh files work

looking at directx samples it has mesh files and i believe are non-api. these mesh files also have texture files that join up (eg tiger.x in mesh tutorial directx). i mean the files are divided into subsets of which there are about 1 subset per different texture map. How do you get the individual points form the files , how does it map the texture to each polygon, and how does it actually work? Eg the tiger.x file has 1 subset and 1 texture in the form of a jpeg. , the dwarf.x has 9 subsets. [Edited by - jagguy on May 30, 2006 7:31:45 PM]
