Idea for intermediatly hard game

There are 2 types of games that really interest me. I'm currently working on the first one, a strategy RPG in a style similar to Fire Emblem, and it's really going well. I expect to be finished (at least with the engine) before the holidays, easily. However, the other genre I'm really interested in is flight games, like the old Aces games, and they sound incredibly difficult to program, especially for someone of my limited experiance. So, I'm looking for a nice, simple, fun 3D game genre that I could create a game of in relatively short order. Any ideas?

Simple 3D games are often very difficult to make. I've wanted to remake Thrust for some time, but that's a 2D game.

How about Bumper Car Freeze Tag?
A simple small terrain (small enough that LOD is not needed aside from frustum culls) and some simple cars that you have to ram to freeze

or 3d Tetris, or 3d Pong are always fun and have a minimum of content and physics to get hung up on...
