Theory behind Oblivion / FNR3 character model customisation / morphing?

Recently I've been trying to work out how games such as Oblivion and Fight Night Round 3 create the 'morphable' character models you see when you create a character. I'd be interested to find out, in general terms (nothing too specific), the theory behind being able to deform the different parts of a mesh like that with sliders so as to change the shape and features of a face and character model on the fly in real time. Anyone have any theories on the mechanics behind this?

Ahhh, very interesting. Extending the question a bit then, what is the theory behind the mechanics of something like facegen? How is it manipulating the mesh like that?
