Rendering as a sphere map?

Well I'm trying to use real-time renders of low poly versions of my scene to do more realistic lighting. I know how to render to a texture, but I'm wondering how I could render the scene as a spheremap so I can use it later for a reflection map. I've read a lot of sites about using sphere maps, which I already have implemented, but I'm just wondering how to render one from my scene. Thanks.
