Extracting data from programs.

I was wondering what some techniques are for extracting data out of programs like games to retrieve state and other information. Basically I am looking to write a program that can scan through the contents of another program to get stuff like variable data, state, and strings. If anyone knows good ways to go about this, I'd appreciate it. Thanks.

also, more generally you may want to look for resources about "reverse engineering" (of which debugging and dis-assembling are crucial components)
