CLOSED walking up/down stairs/across rooftops etc

Without using bsp trees what is the most common method of allowing someone to walk up and down stairs/ across rooftops/ through doors and gaps ? I mean I can easily and very time consumingly calculate the equation of the slope of the stairs - but it would take ages. Obviously using bounding boxes is ok where the building or object is rectangular, but what about unlevel rooftops, gaps etc. In particular I mean for objects and models I have bought in a from a 3rd party so I don't have any control over where these things are ?
