Anyone know the simplest 3D software to use for beginners to use with openGL?

Do you mean '3d modelling software?' If so, there are lots of good programs out there to choose from. (I personally use Wings3D). The important thing is to use something that is compatible with the/a format you plan to use in your code.

Can you elaberate on the quote I have above im trying to find out as much information I need to know about using 3D Modeling software and able to make them animated with the openGL code i make.

You will want to take an extensive look at this list. I use Milkshape3D, it's pretty basic and therefore easy to get started in.
