How to create and use a stencil?

Hello I haven’t worked much with stencils before so I got to clear some things up. I render to a 32 bits RGBA texture. I want the information from the R channel to form regions of a stencil. In consequent renderings I don’t want to write to areas where R is 0.0 (0) or 1.0 (255). How should I create the stencil? Can I create the stencil from the RGBA texture? Or even better at the same time? What format should I use? Shall I use shader or fixed function? How should I set things up? If anybody got some cues to give me I would be grateful. / Simon
