I have been trying to grasp the concept of different data structures but for some reason they aren't sticking, or clicking in the right spot. The two most common ones I hear talked about are heaps, binary trees, and linked lists (doubly and singly). I was taught by lecture with very little example and imagery; however, I am more of a visual learner. So, my big question is, does anyone know of a place _I_ can go to better understand these concepts, as well as learn to use them?

You want to understand how they work in general or how to code them?

Both.

Linked lists

Also, which language did you want to code them for?

You might do a search at http://www.codeproject.com for
the combination (structure/language) that you are looking for.
