I always recommend Riemer's tutorials, as they do a great job of not only explaining how to use HLSL but also how the programmable pipeline works in general. He even covers shadow-mapping, which is a very popular usage for shaders. His application code is in C#, but I had no problem at all adapting it to C++ when I was learning from them.
