Can you go into more detail about the combat. Is it going to be turn based? How big of a role will strategy play? Can you set traps for incoming zombie horde? Stuff like that.
I think this is a really creative idea, but my suggestion would be to keep the game simple and focus on the core concepts. I think that Zombie Apocalypse is a strong idea that doesn't need a million different weapons, powerups, etc.

I think this sounds like a really good idea.
How about having a 'crafting' system. You can find components and make jury-rigged guns and stuff from them.
Like other posters said, variety in the zombies is a good thing.
A bunch of blood and gore, that can add a whole new level to zombie games :)
