3D curves

I'm looking for a way to create 3D curves, kind of like bezier curves, but in 3D space. What's a good way to mathematically represent these? P.S. The closest thing I've found in Blender is the "Path" object.

I'm not trying to create a surface, but rather a path in 3D space. (Take a look at the path object in Blender. I can place control points anywhere I want)

You can use splines (such as Bezier curves) in 3D as well as 2D. Some of the details are a little different (such as computation and handling of coordinate frames), but the basics - evaluating positions and so on - are the same regardless of dimension.
