I have an audio buffer that I'd like to send to the GPU... I understand I can just order all the values in to vec3's or vec4's as a part of a texture and get it that way? Is there a way to just update the texture coords without deleting/recreating? Is there any other way way?

Sure, you can put anything you want in the texture and you have to pay attention to the data format. RGBA8 would be unsigned 8 bit per component.
nvidia has signed 8 bit support (-128 to 127)
Or you can try floating point (ARB_float_texture)
