I've been using Firebug to watch what is being sent and received by Firefox, but I've got a problem. On one page, I see a request appear in the list but then it disappears, I think the actual page is being refreshed and Firebug loses it. Is there an easy way to keep track of my requests/responses in this situation?

Wireshark (ex: Ethereal) and filter by HTTP?

Has the benefit that you can filter what requests/responses you're looking for in potentially more detail. On the other hand, it might be a bit heavy duty for what you're looking for.

Another option is Fiddler, which works by being installed as a proxy server on your local machine.

It also lets you fiddle with the data as it goes in and out.
