can you intercept shaders from outside ?

Can you intercept shaders from outside a program, using some analysis tool ? If so, what tool, and what can you see: GLSL code, compiled code ? Opposite question: is there a way to protect your GLSL code, so no-one can see what happen on the GPU ? Same question for DirectX... Thanks !

its not just shaders, u can also view a games textures etc
theres no way to provent this in opengl/d3d
