Marshmallow duels would probably be the easiest to program(I think it's even open source now)

but I think Smash Bros is the best when played 1v1 :p

Our local game dev group's first project was a Tanks remake in a school setting. Basically you chase the opponent around the room shooting paper airplanes that bounce off the wall. Very easy to make (I'd say one step up from pong).
