Demon's Souls. It grabbed hold of me and wouldn't let go - if I wasn't playing it I was probably thinking about it. I can't remember the last time a game did that for me.
Having said that, i'm not sure if i'd recommend it - it's difficult, takes a lot of patience, and has some unorthodox design decisions which I could see many people not liking - but that game really spoke to me.
