I was wondering how I should handle player rotations server side. Should I just accept whatever the player is telling me for their rotation? I don't think too much trouble could come from this. What do you guys think though? What are some problems that could be caused by this?

Rotation is usually the same as "where the player put the mouse," which is something that the player is authoritative over. If you want to limit the rate at which players can turn, then you should not allow rotation values that would result in a turn rate faster than what's allowed. However, seasoned FPS players can usually do a 180 flip within the span of a single frame, so for fast games like that, limitations really can't be enforced.

On the other hand, if this is a naval battle simulator, then a ship's rotation would not change quite so quickly and could have a serious effect on the game. :) Obviously the developer has to decide these things on a property-by-property basis, taking the game design into account.
