How do I define a path animation with a hermite curve?

I want to define a path animation with a hermite (or bezier) curve.
What are the parameters for the direction, the acceleration and the orientation of the animated object? I don´t know how I can explain the parameters for each of them.
And another question is, what is different if I use a hermite curve for the animation instead of a bezier curve? It is just theretical..

I hope someone can help me. I couldn´t find any useful informations in the net..
