Looking for special feature concepts

I am working on a mining system in my current game which allows players to enter the ground, and begin mining in rock. I want the player to use his tools to mine exactly where they want. I am trying to figure out the best way to start to allow the user to start mining, and then make turns, intersections, go up, down and open up caverns. I know this is very broad, but I was wondering what others think on this topic and what they would do to achieve this feature. My biggest problem is trying to figure out how to code it so the code knows what to do when a player moves further. I don't want to keep track of every single vertice on the cube models, that would just be way to much data.

Any thoughts on the concept here? Thanks.
