For mounts, monsters and items, look to your level design concept art. The environment should help define the animals and creatures that live there. Items should represent the environment and the cultures that exist in your game. Each race will have regional cities I'd assume. Try and build the cultures that exist in those cities, consider their histories and past interactions with each other. This will help create artistic inspirations for items and reasons for the effects they carry. Like a sword of the mountain that saved a highland city by gathering the force of an earthquake within it and kept the mountain from collapsing onto the city (that sort of thing) now it can shatter even the heaviest hammers and shields.

The more interconnected the world is the more connected a player will feel to the game. Look into the history of actual archers and assassins, often this research leads to some surprising design ideas and allows you to connect players to our own history as well. I know this probably wasn't the direct sort of answers you're looking for, but this sort of self study will make a better game for us and you'll be happier with how the game turns out.
never thought about it like that thank you...

Your classes seem to overlap, providing you with your answer. For example, the Shadow class could also be under Rogue aswell as Mage.
Some ideas:

Weapons.
1. Blowgun - Shoots darts that do less damage and have shorter range but can be fired silently and be used to administer poisons. Might even have faster reload and firing speed.

2. Poison - More like a constant use item than a one-shot poison. At the very least one bottle should provide doses for multiple blowdarts. Maybe one bottle of poison cna be crafted to make 10 or so poisoned blowdarts?
I agree with everyone here. You environment should help determine the mounts available. I think you off to a great start!!!
