glEvalMesh2/glMap2f texturing?

How do I texture a mesh generated with glEvalMesh2?? Say, I got that mesh and want to texture it completely (from starting point to ending point, like a square), how do I texture it? It says, use in glMap2f the GL_TEXCOORD_ something for each point, but what I want is to do a texturing of a whole thing. How do I do that
