If you're talking about project examples then:

a) A project where you did writing.

b) A project that you programmed.

c) A project where you did design work.

void hurrrrrrrr() {__asm sub [ebp+4],5;}

There are ten kinds of people in this world: those who understand binary and those who don't.

For all these case it's better to have multiple project to show than just one, that shows you are diversified and not sticked on one topic.

But in general case portfolio must show all project you worked on, it's important when you postulate for a job.

Moving to Job Advice area of the site.

A portfolio should be a showcase demonstrating a person's best work in different areas. It should show what a person is capable of.

Usually a portfolio should focus on what the person wants to do. If you are good at a specific area but want to transition your career to another area, focus on the future rather than the past.

a)Game Writer

A writer should have examples of their best game writing. It could be showing dialog trees, it could show story from completed games they have done. It could show multiple genres such as children's games, JRPG games, horror games, or whatever the writer has experience with and wants to do in the future.

b)Game Programmer

A programmer should have examples of their best code. In addition to code, a portfolio often includes video clips or images demonstrating the results of the code. It should generally show off the range of abilities, such as networking code, AI code, graphics code, or whatever the programmer has experience with and wants to do in the future.

c)Game Designer

Game designer is not an entry level job title. It is a senior position, as game designers are at the helm of 7-figure, 8-figure, and sometimes 9-figure projects. (You don't trust your multi-million dollar project design to just anyone.) You don't get this role without multiple published titles. A portfolio should have video clips with notes and discussions about previously completed games they have built. It should note why design choices were made, tradeofffs that were considered, and should cover a range of genres. As above, it should show off the designer's abilities and demonstrate their experience as it relates to what the person wants to do in the future.
