Starfox and other on-rails games

Specifically, the world ahead is being drawn as you go along, how does this happen? I''ve been programming 3D worlds by designing the world in a 3D art package, exporting as an .x file and play takes place inside this world, but I think with starfox and other games the levels are generated as you fly along.
