I wanted to know if there is a universal method to scaling the polygons that are on the screen in a scene. i.e. a 3D rendering of a baseball stadium for example. What would be the acceptable scale to display it in? Would the 4 corners of the field be 0.0f-1.0f, with all the polygons being within those numbers? Or is it also acceptable to push coordinates into the buffer at -100000.0f to 100000.0f?

It really depends on how accurate you want thigns to be. Bear in mind that with a Z-buffer, you want to stay away from huge Z-values, since the Z-buffer messes up. I always try to keep my coordinates in the range -5000.0 to +5000.0, which should be accurate enough.
