creating mesh texture coords

Im trying to make a program that will take a mesh without texture coords and add texture coords to it and generate a bitmap that shows where to draw for each part. Anyone know the best way of doing this?

Make an orthogonal projection into one of the major planes (x-y, x-z, y-z) of all the vertices and then remove vertices on planes that would be culled.

Then do the same thing in the same plane from the other side.

That should give you two sets of coordinates of all the outward-facing vertices to play with.

Is this the preferred method? What do i do about faces that cover up others on the projection? Like... a guy''s neck, if he had a beard. Is there any other way used often?
