Does anybody know what tech their editor GUIs are using? Google results seem to indicate that both are IMGUI solutions, however given how complex they are i'm wondering if this is actually the case. Does anyone know if this is true?

Blender uses their own gui implementation, they draw it on opengl textures.
I think Unity3D does the same but with directx. It cant know for sure, it even renders HTML's inside editor with WebKit.

big projects always feel constrained with what OS gives them.

I don't think Unity3D uses DirectX, since it was first developed for the Mac.
They don't specify anything about their source code, only that inside Unity you can inherit from EditorWindow class and play with their widgets and components.
