RTS: Starcraft: Broodwar, no contest.
TBS: XCom
RPG: console: FFII (US) PC: Morrowind
MMORPG: The first one you ever really get into. No game will ever be able to match the overwhelming feeling you get from the first mmorpg that grabs a hold of you. For me thats everquest, but I have enjoyed DAoC and Shadowbane as well.
FPS: Quakeworld (w/ clan arena mod), tough call though lots of good ones out there.
RTS: Starcraft: Broodwar, no contest.
TBS: XCom
RPG: console: FFII (US) PC: Morrowind
